1 lb ground beef
1 can petite diced tomatoes
1 cup seasoned breadcrumbs
1 egg
8 oz. provolone cheese diced
3/4 cup diced red onion
3/4 cup fresh basil
1/2 cup ketchup
clove of garlic
Cooking spray
Ketchup
In a large bowl, mix all ingredients thoroughly.
Spray a cooking sheet with cooking spray
and from the mixture into a loaf on the sheet.
Top with additional ketchup.
Bake in a 350 degree oven for about an hour
or until a thermometer inserted into the loaf
reads at least 160 degrees.
This is an excellent variation on the traditional meatloaf recipe. With melted provolone and fragrant basil, its Italian influence is tough to beat.

Mmmmmm. This smells so good when you cook it that it’s tough to wait the hour until it’s done. And it tastes even better than it smells!!
