Ain’t Your Momma’s Meatloaf

Ingredients:

1 lb ground beef
1 can petite diced tomatoes
1 cup seasoned breadcrumbs
1 egg
8 oz. provolone cheese diced
3/4 cup diced red onion
3/4 cup fresh basil
1/2 cup ketchup
clove of garlic
Cooking spray
Ketchup


Preparation:

In a large bowl, mix all ingredients thoroughly.

Spray a cooking sheet with cooking spray
and from the mixture into a loaf on the sheet.
Top with additional ketchup.

Bake in a 350 degree oven for about an hour
or until a thermometer inserted into the loaf
reads at least 160 degrees.


More Information:

This is an excellent variation on the traditional meatloaf recipe. With melted provolone and fragrant basil, its Italian influence is tough to beat.
